Chef Kenny Pelton brings his love of classic New Orleans po' boys to Sacramento with Fully Dressed, Inc. His professional cooking journey started in the Santa Ynez Valley 18 years ago, eventually taking him through restaurants in California, the Pacific Northwest, and Hawaii. He met New Orleans-native Jonathan Walker of Walker's Family BBQ while the two were in culinary school. They have been cooking cochon de lait po' boys together ever since in the annual New Orleans Jazz Festival.
When he had the opportunity to start his own business, Chef Kenny knew immediately he wanted to craft traditional po' boys, seafood baskets, and red beans using a combination of fresh local Northern California ingredients and Louisiana specialties, like smoked pork and alligator sausage. The Sacramento region shares a similarly rich and abundant Delta landscape and food culture with New Orleans, making it the perfect home for the Fully Dressed food truck.
